Hi Bev
DOF is an acronym for Depth of Field (sometimes called Depth of Focus) and is controlled by your lens apeture.
You (or the cameras autofocus) focus the lens on an appropriate distance and DOF is the area in front of and behind the focused distance that will also be acceptably sharp.
The smaller the f stop (i.e. larger number, f22 say) the greater the depth of field, you may want to control this, say on a landscape shot to achieve front to back sharpness, where on a portrait you may want a very narrow DOF to isolate the subject and make it stand out against a blurred background.
Control of depth of field is one of the creative tools that DSLRs excell at given that you can vary your ISO setting, that will allow you to use an apeture that will give you the effect you are after, you can also check you have captured the effect you seek on the LCD rather than have to wait for your film to be developed as with film SLRs.

Ah! Now I understand. I knew what a depth of field was but not what a Dof was. Forgive me but texting isn't something I do often. I guess I'm too old for new style modern language. Sorry must be my age or something. Thanks guys.
